Husband Number 2

Contrary to popular belief, my current Husband is not actually my first Husband – yes, there was one before him; the person I now call Husband Number 2.

Obviously, he wasn’t called Husband Number 2 to start with; he was always my first husband until my current husband came along. Husband Number 2 graciously handed over the title to the only man worthy enough of the claim.

For the rest of this post, the term Husband Number 1 will refer to my current Husband Number 2, just to avoid any confusion.

I met Husband Number 1 while I was working at ACNielsen back in 2005 as an account manager. Spaghetti Bolognese De-Fatted

Spaghetti

I love pasta and I love carbs. Unfortunately, so does the fat girl in me, hence I only try to make one pasta dish per week. If you’re going to be indulging only once per week, you better make sure it’s on something delicious and worthwhile.

Fortunately, I’ve discovered a happy medium: this spaghetti Bolognese dish has been de-fatted due to the fact that it’s made with turkey mince, which has WAY fewer calories than beef – and trust me, you won’t even be able to taste the difference! I’ve also padded this out with some sneaky vegetables, and the whole-wheat pasta is a given.

Husband loves this dish so much – as soon as he walked through the door last night, he sniffed the air like a bloodhound, and asked me excitedly “Wait…is that spag bol I can smell?! WIN!” (Seriously, that’s how we talk. Like idiots.) In fact, one time he bugged me all week to make this dish for him. Cooking Lesson

I’ve been asked many times the question “who taught you how to cook?” It’s actually a combination of people, but mostly me. I personally think I’m a pretty good cook, mostly due to the fact that I LOVE food, and eating. I find it easy to follow recipes and I have a good idea of what flavors work best together. I always go in with the attitude – what’s the worst that could happen? I mean, if you fuck it up (and I have a few times) you can just dump it and order delivery! In fact, I can distinctly recall the dishes I’ve completely fucked up:

Husband LOVES pasta, so I attempted to do a low-fat version of a salmon and asparagus in a cream sauce recipe. Epic Fail. First of all, using low-fat condensed milk in anything is VOMIT. Second of all, what do you get when you combine ingredients that all have no flavor? Hmm…flavorless pasta! Delicious! That went straight from the pan into the trash.

Cider Glazed Lamb Chops with Frisee Salad

So, Husband came home last night. Whenever he returns from a work trip where all he gets to eat is boring room service food and protein bars, I like to cook him something special. Also, this softens the blow for when he checks his online banking statement and sees how much money I spent on my girl’s night on Tuesday.

I found this lamb recipe on Epicurious.com when I was searching for a low-calorie dinner, and it’s so easy to make that I wish lamb wasn’t so expensive over here as compared to Australia!

Start making the glaze around an hour or two before you want to have dinner – it needs time to cool down completely.

CIDER GLAZED LAMB CHOPS with FRISEE AND APPLE SALAD

Lamb Chops

1 cup unfiltered apple cider
2 tablespoons minced peeled ginger
2 tablespoons minced garlic
3 tablespoons soy sauce
3 tablespoons rice vinegar (not seasoned)
1 tablespoon mild honey
8 rib lamb chops (3/4 inch thick), cut from 1 rack
1 scallion, finely chopped

Boil cider, ginger, garlic, soy sauce, vinegar, and honey in a small saucepan until reduced to about 1/4 cup, 10 to 12 minutes. Cool completely. Reserve 2 tablespoons glaze for drizzling.

Preheat broiler.

The Nomad Hotel = Hungover Wednesday

I had a rather large night last night. My good friend CY (who we have renamed Hollywood) who knows everyone worth knowing in Manhattan, scored us a dinner reservation to the opening of the new restaurant in the Nomad Hotel. I was uber excited due to the fact that not only is it a new restaurant, but it is the new venture of Chef Daniel Humm from Eleven Madison Park, and his business partner Will Guidara, the general manager from EMP. Let’s just say I have a small (read HUGE) crush on Will and thought the chances of him being there on opening week would be pretty high.

The evening started off wonderfully, my girlfriend Lindsay met me for pre-dinner drinks at the bar, where we befriended bartender Will (not to be confused with schoolgirl crush manager Will). We then saw Chef Wylie Dufresne from WD-50 and got excited for a whole second. Then we both realized that he is really unattractive, and we both hated the food at his restaurant, hence the excitement was short-lived.

Birthday Wish List

My birthday is coming up next week, and just to save all of you the hassle of trying to discreetly find out what I want, I’ve put together for you a handy shopping list! Lists like the one below are also beneficial in that it saves you having to receive gifts that suck. For example, one of the first gifts that Husband ever purchased for me was a Hermes cuff. Awesome gift, right? Well it did take him a few tries before he got the right one.

It was just after we started dating, and he asks me is there anything I really wanted? I may have hinted to him that I would LOVE a Hermes cuff. Okay, I pretty much said “I WANT A HERMES CUFF.” Lo and behold, my birthday rolls around, Husband hands me a beautiful cuff-sized Hermes box. I eagerly rip into it, and out come something which looked very similar to this cuff:

Meatless Monday Cioppino

I went grocery shopping yesterday morning in preparation to surprise Husband with an amazing Meatless Monday dinner, and then he comes home early, throws some stuff into his carry-on luggage, and tells me “Have a meeting to go to, see you Wednesday night!”

Sigh.  So there I am with all the prep work done for my cioppino, and no one to cook it for! I made an executive decision on the spot and decided to cook dinner for one.

I’ve always loved bouillabaisse, and when I found this recipe on epicurious.com, I was hooked. Then it made me ask – what’s the difference between bouillabaisse and cioppino? After googling it, I found out that cioppino is tomato based, whereas bouillabaisse is white based with tomatoes and saffron thrown in.

Perfect for a Meatless Monday at home by yourself!  Also – this is incredibly low in calories due to the fact that there is very little fat used, and seafood is generally much healthier than meat. If you have high cholesterol, try not to use too much shellfish, and substitute with squid and octopus.

Stalkers Part 2

Ah…where to start with Stalker Number Three? No doubt he will read this post so I’ll try and do him justice.

I met stalker number 3 during my first year of my undergraduate degree at the University of Sydney in 1998; he was a fellow economics major in my Accounting 101 tutorial. I can’t recall exactly how we started talking, it might have been because we were working together in some sort of group assignment and that’s probably how he got hold of my cell phone number. Anywho, after I failed Accounting 101 (what? Accounting is HARD yo. Seriously, who cares about LIFO and FIFO and balance sheets? All I want to know is when my next lump sum of money is going to be deposited my bank account!) I saw him around the campus a few times and there was always some sort of awkward exchange of conversation. Awkward mostly on his behalf because he was quite the dork, and this was WAY before I went through my nerd fetish, so the whole concept of talking to a geek didn’t much appeal to me back then.

Stir Fried Beef Noodles

I closed off my week of Chinese cooking last night with beef stir fried noodles. This dish is usually quite easy to make, however, since Husband and I met our good friends M & D out for a late brunch followed by after brunch drinks, being slightly intoxicated does extend a bit of a challenge, especially when doing the prep work.

Nevertheless, it turned out well, and all fingers and nails are intact!

Note – it’s best to marinate the beef for a couple of hours beforehand.

STIR FRIED BEEF NOODLES (serves 4)

• 1 pound rib eye, sliced paper-thin. You can usually purchase this in Asian supermarkets already sliced

• 1 pound of noodles – I usually use Hokkien noodles, but feel free to use any type you like

• 4 cloves of garlic, minced

• 1 piece of fresh young ginger about the size of one thumb, minced

• 4 stems of scallions – finely chopped

• ¼ cup of reduced sodium soy sauce

• 3 tablespoons of sesame oil

• 4 tablespoons of black vinegar (sub rice vinegar if you don’t have black)

• 1 teaspoon of chilli sauce (omit if you don’t like spicy food)

• White pepper

• Half a medium onion, sliced

• 4-5 ribs of celery, sliced thin on the diagonal

Hangover-worthy Breakfast

Saturday morning. Husband and I are both a little worse for wear as a consequence of the Korean and Karaoke evening we had last night. Ever the Trophy Wife, I’m not going to get a little hangover get in the way of making Husband a kick ass breakfast!

As we all know, I’m a little obsessed with the Trader Joes in my neighborhood, and that is where I found these nifty little bake-it-yourself croissants. What you do is when you come home drunk at around midnight on a Friday evening, you take these tasty little nuggets out of your freezer and set them on a well-greased baking tray for the time that you sleep. In the morning when you roll out of bed, you have these fat little dumplings of proofed croissants! You then preheat the oven to 350°F and brush your pasty croissants with a little egg wash. Pop them in the oven for around 20 mins while you swallow a handful of Advil (or Nurofen Plus that you’ve smuggled in from Australia).
